When she began her holistic diet enterprise in 2009, Elizabeth Stein of Boulder-based Purely Elizabeth wasn’t serious about making granola. Muffins had been her forte. “Lots of my purchasers had been gluten-free, and I wasn’t seeing wholesome choices for baked items to suggest. So, I began to make my very own,” she says.
